Followup inspection to Rpt # VCHN - AR4PYN:

Hand sink clear of obstructions and available for use.
100ppm bleach sanitizer solution available for use. Wiping cloth stored in solution when not in use.
Walk in cooler reorganized. Eggs and raw meats stored below ready to eat foods and vegetables.
Make shift knife holder attached to side of preparation cooler removed. Reminder to store all knives in a sanitary manner at all times.

Note: discussed black sushi rice shelf stability. Like white sushi rice must be acidified to pH of 4.2 or less. Rough test using pH paper showed pH in the range of 4 to 4.5. Adjust acidification procedure and ensure pH 4.2 or less. Note: leftovers at the end of the day must be discarded. BCCDC document on Sushi Safety given to operator.
