Observation (CORRECTED DURING INSPECTION): Meat rotisseries had the cooking elements turned off at start of inspection. Meat temperature was about 60*C.
Do not turn cooking elements off on cooking meat cones. Once cones have been placed on the rotisserie they must be cooked continually until they are finished. The outside of cones on the rotisseried should not be allowed to fall below 74 *C.
