Observation: High temp dishwasher was not working - dishware were not sanitized properly
Corrective Action(s): - Manually sanitize all dishware with sanitizer by soaking in sanitizer solution ( ie: bleach 1 oz in 1 gallon = 100 ppm for 2 minute and air dry )

Observation: Temp at high temp dishwasher did not reach the mini 71 o C at plate inside using thermo label -after 3 runs
Corrective Action(s): - Repair so temp for rinse get to at least 82 o C (gauge) ( inside machine min 71 oc at plate)

Comments

-Coolers measured 4C or colder- with exception of sliding door cooler across janitorial sink - no foods stored
- Freezers measured -18C or colder
- No hot held foods at the time of inspection
- Handwashing station stocked with soap, paper towels and hot and cold running water
- Sanitizer measured 200ppm quats at dispenser in janitorial room
- Ice machine interior clean
-Foods are properly protected in coolers, freezers and dry storage room
- Scoops stored up and out of dry ingredients and ice
- Gloves and hairnets available for staff
- General sanitation and organization is good
-Noted calibration paper and method for probe thermometer - good
-No sign of rodents ntoed.

** Log sheets is in place and up to date- Noted no data for some day for dishwasher or temp recorded as low at rinse cycle- no corrective action taken by the management- Ensure to follow proper corrective actions as noted on sanitation plan : ex: manual sanitizing by soaking dishware (after washing in dishwasher) in sanitizer solution (ex: 1 oz of bleach in 1 gallon of water for 2 minute and let air dry

Discussed:

*** Do not set up the tables for residents to prevent contamination for people passing ( coughing /sneezing or touching)
-No mixing of left over to make a new foods
- Left over max 2 days in cooler -discard after two days
-Provide either max holding thermometers or thermo label to monitor dishwasher temp.
-Re: allergy - ensure to follow allergy prevention protocol
