Observation (CORRECTED DURING INSPECTION): Handwash station hot water was turned off at the time of inspection. Staff stated they use the staff washroom and 2-compartment sink for handwashing.
Corrective Action(s): Handwash stations must be easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. Handwashing is to be carried out at the designated handwash station in the kitchen. Hot water was turned on at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Plastic container used as a scoop was stored directly inside the container of chutney sauce.
Corrective Action(s): Do not store scoops inside food containers - they may potentially contaminate foods. Scoop was removed at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Prep cooler door seals are broken and mould was observed growing in the door seals. Undercounter cooler door seals also need to be cleaned.
Corrective Action(s): Replace door seals to prevent the lost of cold refrigeration air and to prevent the accumulation of food debris.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at 4C (top and bottom).
-Undercounter cooler was at 0C.
-Sweets display cooler was at 4C.
-Chest freezers were less than -18C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing). Test strips available on-site to verify sanitizer concentration.
-Bleach sanitizer pail properly labelled and tested at 200ppm.
-Sauces made the previous night were properly cooled and were probed at 4C.
-Raw meats properly stored separately and below ready-to-eat foods.
-General sanitation satisfactory at the time of inspection.
*Flies were observed in the back storage area shared with the personal service establishment. Remove all unused items and foods to eliminate fly issues.
-Washroom clean and well maintained.
