Corrective Action(s): 1) Do not use opened metal cans to store food items. Opened cans may result in physical contamination of foods.
2) Ensure food items are physically separated to prevent potential contamination of foods (from the bottoms of containers).

Observation: Food debris was found accumulating behind the prep cooler.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times to prevent potential attraction of pests.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at 3C (top and bottom).
-Upright freezer was at -18
-Both chest freezers were at -18C.
-Hot holding was greater than 60C (food items were heated to greater than 74C).
-Fried foods made the previous night were less than 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail labelled and tested at 200ppm.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 4 2023.
-Please contact the inspector if you have any questions or concerns.
