Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food (milk and whipping cream) were stored in a cooler that was at 7.7 to 9.4 degrees C at the time of inspection. Supervisor informed that this cooler was at or below 4 degrees C during her earlier check from the morning.
Corrective Action(s): Supervisor moved milk and whipping cream into another cooler at or below 4 degrees C during the inspection. Ensure cold potentially hazardous food is kept stored at or below 4 degrees C.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Tomato slicer was observed to have food residues over it at the time of inspection. Supervisor informed that this slicer is only disassembled once per week and the tools to disassemble it are not available on-site. Slicer is used twice per day according to the Supervisor.
Corrective Action(s): Ensure the tools to disassemble the vegetable slicer are kept on-site so that it can be disassembled prior to washing, rinsing, and sanitizing it at least every 4 hours between use and after final use each day; Correct by tomorrow. In the interim, supervisor was advised to re-soak the slicer into the soapy water and rinse and sanitize it again during the inspection. Slicer was rewashed, rinsed, sanitized, and air dried during the inspection.

Observation: Permit to operate was not posted in a conspicuous location.
Corrective Action(s): Ensure your permit to operate issued by Fraser Health is posted in a conspicuous location of the food service establishment. Affix the current decal to the permit to operate. Correct within 2 months. Copy of health operating permit replacement form was provided during the previous routine inspection in case you are unable to find your permit to operate on-site (refer to the permit replacement form for details).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. Upright cooler was above 4 degrees C (measured at 7.7 to 9.4 degrees C) at the time of inspection.

2. All three washrooms were not accessible at the time of inspection and had "out of order signs". One washroom (ladies washroom) was missing toilet paper, which is on order according the Supervisor. Second washroom was missing an air dryer, toilet seat cover, and had a partly broken liquid soap dispenser. Supervisor informed that this equipment was damaged by a customer. Third washroom (mens washroom) did not have an operational toilet (flush was not working according to the Supervisor), missing liquid soap at the handsink, and air dryer was not operational.
Corrective Action(s): 1. Do not store any cold potentially hazardous food (e.g. milk or whipping cream) inside the upright cooler until it is maintained at or below 4 degrees C; Correct immediately. Adjust, repair, or re-service the cooler so that it can maintain a temperature at or below 4 degrees C; Correct within 1 week and update the district Environmental Health Officer of Fraser Health.

2. Ensure washroom facilities are accessible for customer use. Make the repairs to ensure each handsink in the washrooms is supplied with liquid soap, hot and cold running water, and single-use paper towels or functional air dryers. Repair the broken toilets so that they are operational and supplied with toilet paper. Supervisor informed they anticipate the repairs will be made to the ladies and wheelchair accessible washroom by Monday next week and it may take longer to correct the mens washroom. Contact the district Environmental Health Officer for a follow up inspection next week.

315 - Refrigeration units and hot holding equipment lack accurate thermometers [s. 19(2)]
Observation: Thermometer was not available inside the upright cooler. Supervisor stated they move the thermometer from another refrigeration unit into the upright cooler to monitor its' temperature.
Corrective Action(s): Ensure each refrigeration unit is equipped with an accurate thermometer. Obtain a new thermometer for the upright cooler; Correct today.

Follow up inspection:
-Light was available in the walk-in-freezer at the time of inspection.
-Supervisor informed that they have not recently noticed any concerns with the sensor in turning on the light bulb in the walk-in-freezer.
-Supervisor with a valid FOODSAFE Level 1 certificate was present on shift.
Note: Only chorine test strips were available on-site as shown by the Supervisor. Obtain chemical test strips for the Quaternary ammonium compounds sanitizer and the Peroxide multi surface disinfectant and cleaner to monitor the concentration of these chemical agents.
