All temperatures meet health requirements - Until the additional fans have been installed in walk-in cooler, ensure all potentially hazardous foods (i.e. meats, cooked potatoes, pastas, dairy, etc.) are stored on the side with fans. Dishwasher tested at 50ppm Cl Plastic has been removed from one half of prep cooler, continue to work on the rest of the plastic.
