The two door cooler measured <4C. The shelves and area around the shelves have been organized and cleaned The dishwasher has been serviced but is still unable to reach 71C at plate's surface. The operator is planning to replace the existing 2 compartment sink with a 3 compartment sink within next month. In the meantime, the operator is to implement manual warewashing with QUAT sanitizer.
