Observation (CORRECTED DURING INSPECTION): Bleach sanitizer spray bottle in the front service area had less than 100ppm chlorine. Staff member then prepared bleach sanitizing solution which was too strong - bleached out test strip.
Corrective Action(s): Bleach sanitizing solution must be maintained between 100ppm to 200ppm to properly sanitize food contact surfaces. Bleach sanitizer greater than 400ppm may be toxic for human health. Bleach at 200ppm was prepared by the operator at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Display cooler storing potentially hazardous foods was at 4C.
-Sandwich cooler currently not in use. Sandwiches are made to order.
-Upright bakery freezers ranged from -9C to -13C.
-Upright freezer was at -18C.
-Hot holding was greater than 60C
-High temperature dishwasher had a final rinse temperature of 72C on the dish surface (minimum of 71C required for proper sanitizing).
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach and sink plugs available.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General food storage practice good at the time of inspection. Foods stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Operator has valid FOODSAFE Level 1 equivalent training.

-Facility is offering dine-in service. Tables/chairs are spaced to provide 2 metres of physical distance between parties. Markers placed on the floor to designate location of tables.

-Background music was not louder than regular conversation.
-Hand sanitizer available at the front entrance.
-Staff and customers were adhering to the Order respecting face coverings.
