Routine inspection conducted of the deli area. Area is generally well-lit and maintained in excellent sanitary condition. The following was noted at time of inspection:
Walk-in cooler at approximately 2C, and all areas of the display cooler measured at 4C or less
Reach-in deli units measured at 3C throughout
Temperature logs are maintained and up-to-date
Quaternary ammonium compound (QUATS) sanitizer spray bottles measured at 200 ppm
3-compartment sink present for warewashing and adequately stocked with drain plugs. Sanitizer dispenser reliably releases 200 ppm QUATS
Deli slicers (manual and automatic) were in use at time of inspection and are disassembled, cleaned, sanitized, and air-dried every 2 hours. Sanitizing logs are properly documented on a log - last cleaning was conducted approximately 1 hour ago - excellent
Knives, spatulas, and scoops stored inside a cabinet were in good sanitary condition
All food products are covered when not in use and stored at least 6" off the floor. Walk-in cooler is well organized
No evidence of recent, visible pest activity noted at time of inspection
