Observation (CORRECTED DURING INSPECTION): Reviewed dishwashing processes for dishes and juice extractor. Proper wash rinse sanitize (air dry) steps not implemented for dishwashing. Hot water from tap is not sufficient to kill pathogens. Two compartment sink sign available for review.
Corrective Action(s): Make sure the proper three step process for dishwashing is followed, including Clean In Place (CIP) equipment. Bleach is available and is the sanitizer of choice.

Comments

Make sure to leave hand wash station free and available for use at all times.
Spray sanitizer (Saniblend RTU - with DIN) quats base disinfectant is very strong. Way above 200 to 400 ppm range.
**Make sure to apply water rinse (with cloth OK) after application to any direct or indirect food contact surface, including countertops.

Cooling unit at 4 C.
Freezer below -18 C.

Bleach on hand. Went through process to get proper ratio for dishwashing. 1/4 cup of bleach to half filled sink will provide 100 ppm solution. Make sure to soak dishes for 30 seconds as discussed.
