Follow up inspection:
The plastic liner was removed from the lower surface of the stainless steel table so that it can be more easily washed and sanitized.
Dishwasher final rinse temperature was 72.2 degrees C (71 degrees C or hotter at the plate) however the display unit for the rinse temperature was still not in good working order. Staff did not know if there was a waterproof thermometer available on-site to check the dishwasher final rinse temperature at the time of inspection.

The following is to be done:
1. Obtain a waterproof probe thermometer with a min/max button and a cover to confirm that the dishwasher final rinse temperature is at least 71 degrees C at the plate. Alternatively, you can have the display unit of the dishwasher repaired to enable staff to monitor that the rinse temperature is at least 82 degrees C (180 degrees F) at the manifold during the final rinse cycle.
2. Provide an update to the area E.H.O. within 2 weeks time.
