Observation (CORRECTED DURING INSPECTION): One large insert of hot sour soup was covered and left on the counter, measured at 71.9C. Operator informed that the soup was cooked about 2 hours ago at noon.
Corrective Action(s): Please use the ice water bath to cool down food as demonstrated, and cool food within 2 hours to 20C before transferring to the walk-in cooler.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): A bucket of bleach sanitizer was placed inside handwash station. After directing staff to move bucket away, staff forgot and placed the bucket back into the handwash station. Repeat.
Corrective Action(s): Do NOT place anything inside handwash station as this is designated for handwashing only.

Observation: 1) Frozen spring rolls were stored in grocery bags directly, in the freezer. Repeat. 2) Raw meats were not covered in the walk-in cooler.
Corrective Action(s): 1) Do not store food directly in grocery bags, use food grade bags only. 2) Always cover food with tight fitting lid if not in use.

Observation: Broken prep cooler that has been fixed is soiled with food debris. Lots of grease build up on the exhaust filter and on the kitchen floor. Food debris building around chest freezer by walk-in cooler.
Corrective Action(s): Please do a deep clean on all noted areas by follow up inspection.
