209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): It was observed that food contact surfaces washed and sanitized through the dishwasher were being dried with a cloth towel. *Repeat Issue*
Corrective Action(s): Ensure all food equipment, preparation utensils, storage containers, and other food contact surfaces are air dried after they are washed and sanitized through the dishwasher. Please communicate this with students involved in the warewashing procedures each semester. Recommended: Post signage indicating that food contact surfaces should not be towel dried upon dishwashing.

The above noted food contact surfaces were placed through the dishwasher again upon verbal direction by the district EHO and were left to air dry.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent droppings were observed in the following areas of the school cafeteria:
1. Corner near the door and shelving unit in the dishwashing area
2. Peripheral floor area behind the laundry machines in the room adjacent to the dishwashing area
3. Floor behind a white dry storage bin
4. Floor along the peripheral area near the ice machine
5. Hard-to-reach floor area behind the cooler near the entrance door and sliding gate.
6. Floor behind the stovetop near the dry storage room.

Corrective Action(s): Ensure the following corrective action is undertaken:
1. Clean all of the affected areas with bleach water to remove the rodent droppings today. Monitor for signs of recent pest activity each day of operation and clean affected areas to remove the droppings immediately.
2. Protect all food equipment/utensils/containers/cutting boards from contamination by keeping them covered in pest-proof enclosed areas (e.g. cabinets) or food grade containers with tight fitting lids at least 6 inches off the floor.
3. Ensure all prep. surfaces are sanitized prior to use and after each use.
4. Continue with the pest control program on at least a monthly basis and sealing any potential entry points to prevent rodents/mice from entering the food premises.

Observation: The sliding gate/window between the cafeteria and school has spaces between it that may enable rodents to enter the food premises from the school.
Corrective Action(s): Ensure the cafeteria is protected from the entrance of pests (rodents) by sealing off all entry points; Correct within 3 months.

Comments

Handsink in the school cafeteria, adjacent dining room, and staff washroom were adequately supplied with liquid soap, hot and cold running water, and paper towels.
Walk-in-cooler and other coolers were at or below 4 degrees C.
Walk-in-freezer temperature was satisfactory.
Hot-held food was at or above 60 degrees C (actually measured above the minimal internal cooking temperature of 74 degrees C).
Dishwasher final rinse temperature was 72.2 degrees C (71 degrees C or hotter) at the plate.
Ice machine was in a clean condition and the scoop was stored separately.
200 ppm QUATS sanitizer was available from the dispenser and the spray bottles.
Food was covered in the coolers.
Dry storage rooms were in a clean condition.
