Observation (CORRECTED DURING INSPECTION): 0 ppm quat sanitizer detected in sanitizing sink. Until automatic mechanism is repaired premises is to add quat by hand and test to verify concentration. Quat solution tested at approx 400ppm at time of inspection after quat was added by hand.

Bottom of meat display case observed with food debris build up. Staff stated it should have been cleaned on Wednesday evening but was not done due to staffing issues.

Observation: Monitoring of the concentration of quat sanitizer in the sanitizing sink in the meat department is not being done.
Corrective Action(s): Set up a daily monitoring log to test the quat sanitizer on a daily basis to verify that a minimum of 200ppm of quat is being dispensed into the meat depatement sanitizing sink.
