Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Underside of shelving directly above food preparation surfaces observed with food splatter build up. This includes the shelving unit below the microwave oven which is directly above a food preparation surface.
Runners inside both prep coolers opposite to grill observed with mould build up. Ceiling inside both prep coolers observed with food splatter build up
All the cutting block knives have been in contact with surfaces with old food debris build up
Wash rags sanitizer concentration tested at 0ppm. Signage posted to change sanitizer solution every 2 hours. Wiping rags when not in use must be stored and submerged in the chlorine sanitixer.
Correction: Clean as directed

Glaswasher tested at 125F and 13ppm Iodine. Soap dispensed into wash tank
Bleach tested at 100ppm in containers with wiping cloths.
Underside of shelving cleaned

*Ensure food stored in the containers does not fill higher than the edge of the containers or else it will contact the ceiling of the prep cooler and potentially stick.
