Observation (CORRECTED DURING INSPECTION): Butter sauce and onion gravy observed reheating in hot holding unit. Interal food product temperature ranged from 7 to 25 degrees C.
Corrective Action(s): Instructed staff to reheat these items on the stove to over 74 degrees C. Reminder to reheat foods quickly then transfer to preheated hot holding unit.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Under the stove drawer cooler ambient air temperature observed to be ~ 8-12 degrees C. Internal food product temperatures ~ 8 degrees C. These items are dispensed into trays to be stored in the drawer cooler.
Corrective Action(s): All items in the drawer coolers relocated to the under the counter cooler and walk in cooler. Ensure all cold potentially hazardous foods are stored at or below 4 degrees C.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): At the time of inspection both unlabeled spray bottles 0ppm chlorine or quat sanitizer. Quats sanitizer spray bottle labeled as ready to use 0ppm quats concentration.
Corrective Action(s): Ensure during operation a 100ppm bleach or 200ppm quats sanitizer solution is available for use. Staff instructed to dilute 1 oz of regular unscented bleach to 1 gallon of water. Store all wiping cloths in this solution when not in use. This is a recurring issue. Further non compliance may result in the issuance of violation tickets.

Observation:
- Tubs used to store various spices not provided with lids. These tubs were placed on shelves along the south wall.
- Container of prawns and tub of dough observed stored on the floor in the walk in cooler.
Corrective Action(s):
- Ensure these containers used to store spices are adequately covered to protect from contamination. Correct immediately.
- Do not store food products on the floor. Store all food products at least 6" off the floor. Correct immediately.

Observation (CORRECTED DURING INSPECTION): At the time of inspection back door to premise left open. Screen door was not in use.
Corrective Action(s): To prevent the potential entry of pests keep the back door closed or use the screen door.

Observation: Grease and dust accumulations observed on the exhaust canopy filters. Food and grease accumulations observed underneath and behind cooking equipment. Food debris accumulations observed underneath and behind shelves in the main food preparation areas.
Corrective Action(s): Throughly clean the above mentioned areas. Ensure the premise is cleaned on a regular basis. Focus cleaning efforts underneath/behind equipment and all hard to reach areas. Correct by February 21, 2023.

Observation: Under the stove drawer cooler ambient air temperature observed to be ~ 8-12 degrees C. Internal food product temperatures ~ 8 degrees C. Temperature gauge also reading ~ 10 degrees C.
Corrective Action(s): Service the drawer cooler under the stove. Do not use until serviced and capable of maintaining 4 degrees C or less. Correct immediately.
