Observation:
General sanitation level is good, but the following areas were found to have accumulated food and grease:
- Handles of equipment had accumulated grease.
- Floor right under the central preparation tables had accumulated food and debris.
- The catch trays under the char-grill and gas burners had accumulated food.
Corrective Action(s):
Wash and clean the mentioned areas every night to remove the grease and food debris. This will prevent pests from being attracted to the premises.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation (CORRECTED DURING INSPECTION):
The back splash of the char-grill was covered with aluminum foil and changed 3x a week. Aluminum foil is not cleanable and poses a fire hazard.
Corrective Action(s):
Discard the aluminum foil every night to prevent a fire and the attractant of pests. Staff will discard the foil tonight and replace it new foil on a daily basis..

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION):
Drawer cooler (across from gas burners) had a missing door. The opening was duct taped shut and still in use. All equipment must be in good working order as per the manufacturer's specifications, and made of a material that is food grade, sealed, and cleanable.
Corrective Action(s):
Immediately relocate the food out of the drawer cooler into a working cooler. Discontinue using the drawer cooler until it has been repaired or replaced, and meets the manufacturer's specifications.
During the inspection, the food was relocated to a working cooler.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 40F or colder; freezer was below 0F; hot holding units were above 140F; thermometers present; and temperature recorded daily.
- High temperature dishwasher was 75C during the rinse cycle.
- Quats sanitizer in cloth buckets was 200ppm. The solution is changed every 2 hours (time stickers used).
- Food storage practices done correctly. Foods stored in food grade containers; covered; date coded; labeled; in groups separating raw animal proteins from RTE foods; and 6" off the floor.
- Food handling practices done properly. Staff wash hands appropriately; disposable gloves used correctly (discarded upon completion of a tasks and starting a different one); and utensils used to handle foods.
- Stock rotation done correctly. FIFO rule used, and no expired foods in use.
- FoodSafe certified staff present. All supervisors possess the certificate.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests.

A follow-up inspection to occur once the drawer cooler has been repaired or replaced. Contact our office to schedule the inspection as the drawer cooler can't be used until it is inspected by our office.
