Comments

Following corrections have been made:
- Dry storage room has been re-organized and cleaned. Gaps are filled with foam sealant. Items are placed on the shelves and food items are inside pest proof containers.
- Equipment room has been re-organized and cleaned. *Noticed one part with gap between the wall and the floor - fill this gap. This particular area was pointed out to the manager.
- Cleaning has been done for the wooden shelves at the sushi bar area, but some missed spots are identified. Ensure to clean and sanitize missed areas as well.
- Extra cardboard boxes are removed from the back.

Manager stated that the frequency of pest control visits are now increased to once a week. The most recent report dated Nov 17, 2022 indicates catch number of 3. Continue their weekly visits until decrease in rodent catch numbers are observed. More tincat traps are installed throughout the restaurant.

Ensure to maintain high level of cleanliness/organization to prevent pest population from increasing. All areas affected should be cleaned with warm detergent solution, and then wiped with 1000ppm bleach (1 part bleach to 50 parts water).
Clean areas of concern (storage room, equipment room, sushi bar bottom shelves) EVERY DAY in using method.

*Noticed debris build up underneath the wire shelf holding mayo containers. Clean the floor.
