Observation:
Observed plastic hanging from the walls in the room with mixers #4 & #5. The plastic is not durable and can not be washing and sanitized on a daily basis. Food and dust can accumulate.
Corrective Action(s):
Remove the plastic and stop using it, or it must be removed every night and new (food grade) plastic shall be placed up.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler storing non-perishable items (nuts, oats, flavorings, etc.) was 6C; thermometers present; and temperatures recorded daily.
- All foods stored 6" off the floor on pallets or racks. Allergens and organic ingredients stored separately from other food ingredients. All foods stored in food grade containers; labeled; date coded; and covered.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Cleaning schedule covers all areas and at a frequency that maintains the sanitation level.
- No signs of pests. Abell Pest Control contracted to do monthly audits, as well as weekly monitoring for specific pests.
- High temperature dishwasher had a rinse cycle temperature of 71.1C at the plate's surfaces, as per the max/min. thermometer. Operator tests dishwasher daily with a waterproof thermometer. Ensure to calibrate the thermometer at least once a month.
- Boot dips use dry and liquid Quats sanitizer. The liquid Quats sanitizer had a concentration above 200ppm. Test strips are being procured for the liquid Quats sanitizer.
- Review the use of gloves in the small cleaning room. The same gloves should not touch dirty and clean items, as this creates a cross-contamination scenario.
- All equipment and surfaces are in good working order.
