Observation: The Hoshizaki ice machine is approximately 1 1/2 years in use and may not have had a CIP (dismantling and removal of internal plumbing parts and thorough cleaning and sanitizing of the internal plumbing lines) procedure performed on it. The CIP procedure may be available on line.
Corrective Action(s): Ensure that the ice machine receives a CIP procedure and keep a copy of the service technician's invoice for review upon re-inspection.

Observation: Ceiling tile and return air vents above the kitchen prep. table have accumulations of grease and dirt.
Corrective Action(s): Clean or replace the affected ceiling tile and clean the affected return air vents.

Observation: The walk-in cooler reefer unit drip line is plugged and the drip pan overflows (into pails placed to catch the drips).
Corrective Action(s): Service the unit as discussed and ensure the drip line functions as designed to remove condensate to waste water plumbing.

Generally well maintained and operated. Sanitation is very good. Refrigeration measures < 4 C. Freezer temperatures measure < -18 C. No hot-holding at time of inspection. Dishwasher final rinse temperature measures 71 C. Spray sanitizer measures 200 ppm Cl. Wiping cloth (chemically treated Quix Plus sanitizing towels are in use) sanitizer measures 200 ppm Q. Premises is in partial compliance with the Transfat regulation.
