Observation: Build-up of raw meat juices and blood noticed on the floor in the walk-in cooler. Meat processing equipment ( meat grinder) and meat cutting table found to be in need of cleaning.
Corrective Action(s): 1, Ensure to clean any spills of raw meat juices from the floors every day using a floor degreaser.
2. Meat grinder must be dismantled, cleaned and sanitized in accordance with your sanitation plan
3. Thoroughly clean and sanitize the meat grinder and meat cutting table
4. Clean the door handles and sliding doors in both display coolers. ( By May 22, 2022).
