Observation (CORRECTED DURING INSPECTION): - 3 bags of cooked lentils which were stored in chest freezer noted in violation code 205 were 6.0 to 6.7C. It was unclear how long the product had been above 4C.
Corrective Action(s): - Product noted above was discarded at time of inspection by staff member.

Observation (CORRECTED DURING INSPECTION): - Used plastic packaging (bags) being used to line prep tables while processing food. This is not suitable as it is not clean/sanitary.
Corrective Action(s): - Remove plastic. Discontinue this practice. Prepare food directly on sanitized food contact surface or equipment (eg. tray).

Observation: - Chest freezer was not maintaining all product in a frozen state. Temperature of product ranged from -5C to 6.7C
Corrective Action(s): - Repair or replace chest freezer. Freezer must maintain product at -18C or colder. [Correction date: 28-Feb-2019]

Comments

- General sanitation of premises was satisfactory and has improved since previous routine inspection. Flooring has been refinished. Surface is smooth and washable.
- Handwashing stations were supplied with hot and cold water, liquid soap and paper towel
- Food handlers wear hair protection while in food processing area
- Walk-in cooler was at 4C
- Back walk-in freezer (pakoras) -20C
- Front walk-in freezer (samosas) -20C
- White "viking" upright freezer -15C
- Bleach sanitizer solution present in spray bottle which was labelled. Concentration of solution measured 100-200ppm chlorine
- Bucket of bleach sanitizer solution present with wiping cloth stored in it. Concentration of solution measured 200ppm chlorine
- Dishwasher operational. 50ppm chlorine detected on dish after cycle. Test strips present for verifying sanitizer concentration. Records present.
- Observed food cooling on shallow metal trays. Items were being transferred to the cooler to complete cooling process. *As there are multiple items cooling at once, label rack or tray with time at which cooling begins to ensure items are being cooled according to the followig parameters from 60C to 20C within 2 hours max and from 20C to 4C within 4 hours max.
- No evidence of pest infestation at time of the inspection. Pest control contract in place with monthly service. Report from most recent service (14-Feb-2019) viewed at time of the inspection.
- Staff member present holds Foodsafe level 1 certifcate (completed Nov. 2017)
