Observation (CORRECTED DURING INSPECTION): Char siu BBQ sauce found in bucket on window sill. Operator stated that it had been there since Sunday.
Corrective Action(s): Sauce discarded. Food must be cooled from 60-20C in 2 hours or less and from 20-4C in 4 hours or less. Cooling chart in Chinese provided to the operator.

Observation (CORRECTED DURING INSPECTION): Still frozen shrimp and fish were thawing in the sink.
Corrective Action(s): Frozen foods must be thawed under cold running water or in the cooler. Operator put foods under cold running water at the time of inspection.

Observation: Rodent droppings observed in the basement area.
Corrective Action(s):
- Pest control company is in once every two weeks
- Clean and sanitize the areas where rodent droppings are found with a 1:10 bleach solution (1 cup bleach in 9 cups water)
- Put any foods in pest proof containers

Observation: Entire kitchen area requires thorough cleaning, especially behind, beneath and between equipment.
