-Temp. all coolers & freezers are satisfactory
-Hot holding temp > 60 oC
- Dishwasher chlorine residual > 50 ppm
* Chlorine solution in Spray bottle too strong - dilute to have 100 ppm
- Paper Towel & liquid soap are provided.
- General sanitation & cleaning satisfactory.
- No sign of pests noted.
* Ensure to label all prepared foods in walk in cooler with date of prep. and rotate as required.
* Noted couple foods at room temp. staff stated that foods been put out for prep. Ensure to store foods either in cooler < 4 oC or hot holding unit at >60 oC not at room temp.
* Staff not able to locate log sheet (temp monitoring /dishwasher sanitizer record sheet)- ensure log sheet is on site and up to date.
