Observation (CORRECTED DURING INSPECTION): A pot full of spicy noodle soup was found stored at room temperatures for just over 2 hours.
Corrective Action(s): Ensure to cool down the cooked soup to room temperature ( 20 C) within 2 hours by placing the pot in a sink with cold water.
Refrierate the soup once it is cooled down to room temperature.

Observation: 1. Soot and grease build up noticed on the ceiling tiles near the fume hood.
2. Build up of utensils and excessive cultter on the storage shelves.
Corrective Action(s): 1. Ensure to replace or clean the dirty ceiling tiles (By Feb. 28, 2018).
2. Clean and organize all storage shelves and the interior of all coolers.

* The fume hood must be professionally cleaned/serviced every 4 months.
* Do not store any take-out containers near the washrooms.
* Cover the bottom shelf of the sliding door cooler to prevent rusting/deterioration from dripping meat juices etc.

Line cooler across from the grill < 4 C.
Beverage cooler below 4 C.
Liquid soap and paper towels available at the hand sinks.
Quats sanitizer at the dispenser tested 200 ppm.

Ensure to monitor and record cooler temperatures every day.
