Observation (CORRECTED DURING INSPECTION): 1) There was no surface sanitizer available at the meat section. Bleach bottle available.
2) Build up of food debris on the blades of the meat slicer.
Corrective Action(s): 1) You must have surface sanitizer available at 100ppm chlorine solution in the meat section. The bleach dilution is:
- 1 tbsp bleach to 1 gallon water or
- 1 tsp bleach to 1 L water.
This is a repeat violation. Failure to comply will lead to stricter enforcement.
2) Clean and sanitize the meat slicer after each use.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): There was no hand soap at all handwashing stations (ie staff washroom, meat section, back two compartment sink).
Corrective Action(s): Provide hand soap at all handwashing stations. All handwashing stations must be stocked with soap and paper towels.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Multiple bulk bin cabinets are missing covers. Multiple scoop handles were touching the food items.
2) Opened bag of dry food items stored uncovered in the dry storage area.
Corrective Action(s): 1) Install covers. You must also ensure that scoop handles do not touch the food items. Recommended signs for customers to store the scoops in a manner in which the handles do not touch the food items.
2) All dry food bags must be completely sealed or dry food items must be stored in pest proof bins with proper lids.

Observation: Coffin cooler at the meat station is not functioning.
Corrective Action(s): Replace or fix the cooler. All equipment in the store must be in good working order. There is adequate cooler for meat storage.

Comments

General Store:
- General sanitation is good.
- All coolers (upright display) < or = 4C
- All freezers < or = -18C
- Temperatures are monitored manually by staff.
- Temperature log is maintained and kept up to date.
- No signs of pest activity. Pest control company is hired as needed. Recommend pest control inspections on regular basis.
- Bulk food items are dispensed using scoops stored outside the dispenser.
- Random food items (i.e. prepackaged spices, canned food items) checked for expiration dates, condition of packaging, and any signs of deterioration. All in good conditions.

Meat Section:
- Display cooler at < or = 4C
- One of the display coolers located at the meat section is not in use. The operator stated that this one will be replaced with a new unit.
