306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) There is minimal accumulation of grease and food debris on walls in dumpling making room behind the prep table; on the side of equipment in the dumpling making room; on walls in the kitchen; on handles and doors of coolers and freezers; and on shelves in the dry storage room. This will attract pests.
2) Domestic, powdered laundry detergent soap is being used to wash the floors of the kitchen. This soap is not made to clean floors, nor is it strong enough as it isn't a "degreaser".
Corrective Action(s): 1) Clean these areas with soap and hot water. Ensure these areas are being done on a regular basis....daily or at least once a week.

2) Immediately purchase commercial grade, floor degreaser for food contact surfaces to clean the floor. Call a chemical supplier (company that supplies dishwasher chemicals) to purchase this product.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Aluminum foil, with grease accumulation, is covering surfaces in the dumpling making room and by the flatbread grill station. Foil is not cleanable and shall only be used once (one day) and then thrown away, as it will attract pests.
Corrective Action(s): The aluminum foil MUST be removed at the end of the day, and new foil installed at the start of each day.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The low temperature dishwasher had [Cl2] of 0ppm during the rinse cycle. The dishes are not being sanitized.
2) The upright freezer, by the dishwasher, has not been replaced yet. The plastic, interior surface is cracked and the insulation is exposed. This is not cleanable.
Corrective Action(s): 1) Immediately call a company to repair the dishwasher, so the [Cl2] is between 50-100ppm during each rinse cycle. Manually sanitize dishes after running through the dishwasher, by filling a sink with hot water and bleach (1 Tbsp of bleach to 4L of water) and soaking dishes in it for 2 minutes. Then remove and air dry. During the inspection, the owner called a company to come and repair the dishwasher.
**Correction date: Immediately**
2) Replace the upright freezer with a new/used one, so all surfaces (interior and exterior) and smooth, durable, sealed and cleanable. Failure to do this, will result in the issuance of correction orders and/or fines.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -16C or coler; hot holding units above 60C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels and running hot and cold water.
- Manual sanitizing of dishes being done until the dishwasher is fixed. Add 1Tbsp of bleach to 4L of water.
- Cloth buckets had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; foods stored in groups with raw proteins below RTE foods; and foods stored 6" off the floor on shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level has increased from the last inspection. Improvement needed in the mentioned areas.
- No signs of pests.
- Valid, FoodSafe certifided staff present.

**A follow-up inspection will be completed tomorrow to check the dishwasher is fixed**
