Observation (CORRECTED DURING INSPECTION): Inserts of different sauces held on ice next to grill were measured to be at 12C.
Corrective Action(s): Lobster sauce discarded at time of inspection. Other sauces were kept at small portions - OK. Ice level was increased at time of inspection. Ensure ice slurry level is always high enough such that the inserts are in contact with the ice. Also ensure to keep portions of sauces in these inserts LOW, such that they can be turned over every 2 hours.

Observation: Drain flies still present in significant numbers in dishwashing area, although improvement noted from previous inspections.
Corrective Action(s): Continue with flushing drains and pest control servicing. Ensure the entire dishwashing area, including UNDER counters/drain boards are thoroughly scrubbed/cleaned/sanitized with bleach solution on a daily basis.

Observation: - Floors, walls, and all fixtures under dishwashing area require deep cleaning. Ensure to also sanitize this area with a strong bleach solution as part of daily cleaning duties.

- Insides of upright cooler and freezer on cook line require cleaning

- High-temperature dishwasher reached 73C at the dish surface during rinse cycle
- Glasswasher dispensed 12.5 ppm iodine to rinse cycle
- All coolers were measured at 4C or colder
- All freezers were measured at -18C or colder
- Hot-held food items were measured at 60C or hotter
- Temperature records well maintained
- Food storage practices satisfactory. Dry storage areas satisfactory
- Pest control in place, however drain fly issue still noted in dishwashing area. **This area must be thoroughly deep cleaned and sanitized with bleach solution daily.
