Observation (CORRECTED DURING INSPECTION): 1. Raw shell eggs were kept in an ice bath but most of the ice has melted.
2. Perishable foods stored at 6C in the large double door cooler.
Corrective Action(s): 1. Refill ice bath with more ice to ensure eggs are kept at 4C or below. Date to be corrected by: Immediately
2. Move all perishable foods in the large double door cooler to the walk-in cooler. Date to be corrected by: Immediately

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher was not dispensing chlorine sanitizer at 50 ppm. Multiple cycles measured 0 ppm.
Corrective Action(s): Operator switched out the container of sanitizer and primed machine. Test strip measured 50 ppm during subsequent cycles. Operator was instructed to wash all dishes, utensils, and equipment again in the dishwasher.

Observation (CORRECTED DURING INSPECTION): Scoops for the ice machine and bulk sugar container were stored together with the ice and sugar respectively.
Corrective Action(s): Store scoops separately from food to avoid potential contamination from the handles to the food. Date to be corrected by: Immediately

Observation: 1. A soap dispenser at one of the hand washing stations needs to be remounted to the wall.
2. Large double door cooler is unable to maintain temperatures of 4C or below.
Corrective Action(s): 1. Fix this soap dispenser. Use the other hand washing station until this has been repaired. Date to be corrected by: August 31, 2018.

- No signs of pests observed during inspection

*Obtain chlorine test strips and start maintaining a dishwasher log. Test at least once per day to ensure dishwasher is working properly.
