-Kitchen not in operation during the inspection. It is normally used in the morning by a volunteer group that bakes cookies. -Ensure that a sanitizer solution is available for food contact surfaces. Acceptable sanitizers include a 200 ppm quaternary ammonium solution or a 100 ppm bleach solution (1 tsp per liter) All coolers were < 4 C. Freezers were < -18 C. The dishwasher reached > 71 C at the plate level. No evidence of pests. General sanitation was satisfactory.
