Observation (CORRECTED DURING INSPECTION): 3 issues:
-REPEAT OBSERVATION: Prep cooler bottom's contents found to be 9.2 degrees C and 9.4 internal (chicken wings and chicken bites).
Ambient temperature measured approximately 11 degrees C
-1 small container of halved chicken bites left out at room temperature. contents measured 14.5 degrees C
-1 half full small bucket of garlic spread found at room temperature (product stated on label to keep refrigerated)
Corrective Action(s): All contents of the prep cooler moved to the walk-in cooler. Sign posted to not use the prep cooler bottom until it has been repaired and is capable of holding contents at or below 4 degrees C (40F)
Chicken bites and garlic spread left out at room temperature were discarded. Ensure that all cold potentially hazardous foods are stored at or below 4 degrees C

Observation: 1 live mouse found caught in trap underneath back of house prep table.
mice droppings found in the following areas;
-behind the clothes washer
-behind the computer and wiring in the office
-behind the small prep table adjacent to the office
-in the washroom floor level cupboards
-on the floor around the hot water tank
Corrective Action(s): Contact pest control professional to service traps immediately.

Clean and sanitize areas noted above to have mice droppings.

Corrective Action(s): Discontinue the use of the bottom of the prep cooler.
Repair the prep cooler and ensure that it is capable of maintaining contents <4C at all times. Do not use cooler's bottom area until it is repaired.

=Walk-in cooler (3C) and prep cooler top (1C) measured < 4 degrees C
=3 compartment sink with sink plugs available for manual dishwashing. Operator able to demonstrate manual warewashing method
=Banitizer solution at 200 ppm QUATS available in spray bottles
=General sanitation was good at the time of inspection
=General food storage practices good at the time of inspection. Foods properly stored off the floor and covered.
=No evidence of pest activity noted at the time of inspection
=Staff hygiene was satisfactory at the time of inspection

note: operator turns off prep cooler during closed hours and turns on the unit in the morning. Discontinue this practice.
