Observation (CORRECTED DURING INSPECTION): Frozen pesto sauce was stored in the plastic container. The lid of the container was shattered. Small plastic pieces observed on the sauce.
Corrective Action(s): Pesto sauce discarded.

Observation (CORRECTED DURING INSPECTION): Butter chicken curry in the prep cooler insert filled up to the rim. Surface temperature noted at 7 deg. C. After mixing the curry, temperature dropped to 5 deg. C.
Corrective Action(s): Divide the portion in half. Do not store foods beyond the fill line as discussed. Prep cooler inserts are not designed to keep foods above the fill line cold.

Observation (CORRECTED DURING INSPECTION): 1) Flour, dough, dried food debris noted in the bench dough roller. The operator reported that they clean and sanitize the machine once a week.
2) A blue cutting board with a food debris stored along side of cleaned cutting board.
Corrective Action(s): 1) Food contact surfaces, equipment and utensils that are in continous use must be cleaned and sanitized every 4 hours. Clean and sanitize the roller before being used today.
2) Clean and sanitize the cutting board.

Observation: 1) Multiple food items in the prep cooler and walk-in cooler are not covered.
2) Poly boards were being used to line in between pizza pans with rolled dough. Black mouldy substances noted around the edge of the boards.
Corrective Action(s): 1) Provide a cover for all opened food items. Recommendation: plastic wrap, aluminum foil, food grade lid.

2) Discard all the poly boards on site. These cannot be cleaned and sanitized. Pizza pans are to be covered with a food grade material that can be cleaned and sanitized.

-Handwashing stations equipped with hot/cold running water, liquid soap and paper towels. Adequate handwashing noted.
-General sanitation is excellent (except code 302)
-Bleach sanitizer at 100 ppm. Change to a new sanitizer solution every 3-4 hours or when visually soiled, whichever is earlier.
-Clean-in-place equipment cleaning procedure reviewed.
-Manual dishwashing procedure reviewed
