Observation (CORRECTED DURING INSPECTION): -A large basket of fried yam observed in Walk-in cooler -the basket is not clean and has not been dishwashed.

-3 open cans of soy sauce stored in fridge

-2 large bags of ramen noodles at room temperature -operator indicates they have been there >2 hours
Corrective Action(s): Discard all of these foods

Once a can is opened empty out the contents

Only take out enough ramen noodles that will be used within 2 hours

Observation (CORRECTED DURING INSPECTION): Again observed improper cooling:

2 medium sized containers of cooked tofu (Kao-fu) at room temperature -a similar infraction was cited in last routine check -Correction Order issued -next enforceable step is ticketing
Corrective Action(s): Use wide shallow trays for cooling solid foods in your speed racks
