Observation (CORRECTED DURING INSPECTION): Hot holder for single pizza is only 45 deg C as operator does not want it to dry out over 60 deg C. Operator indicates he is following the 2 hour maximum rule then discard. However there is no time tracking being done
Corrective Action(s): You MUST be time tracking to ensure potentially hazardous foods like the pizza are not held longer then 2 hours at room temperature.

Operator is using eraseable markers and board as a possible solution -OKAY

You will need to update your Food Safety Plan: for hot holding of pizza slices under this protocol -submit within a week
