Observation (CORRECTED DURING INSPECTION): Can opener blade and upper guard of the meat slicer observed to have built up of food debris.
Corrective Action(s): Clean and sanitize the aformentioned items. They must be cleaned and sanitized after each use.

Observation (CORRECTED DURING INSPECTION): Chlorine spray bottle measured <50ppm or >200ppm. Operator informed that food contact surfaces are clean with detergent and water only. Operator informed that dishware are washed with detergent and bleach mixed followed by rinse and air dry.
Corrective Action(s): Prepare cholrine sanitizer spray bottles to measure between 100-200ppm. This is to sanitize food contact surfaces. Educated operator on proper 3-compartment manual dishwashing method.

Observation (CORRECTED DURING INSPECTION): Observed containers of canola oil obstructing handwashing sink.
Corrective Action(s): Ensure all handwashing sink is unobstructed at all times to ensure proper hand hygiene of staff.

Observation (CORRECTED DURING INSPECTION): Observed container of frozen salmon to be thawed at room temperature.
Corrective Action(s): Transfer frozen salmon into cooler to be thawed. All frozen products must be thawed in cold running water or in the cooler able to hold an air ambient temperature of 4C or lower.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
3-compartment sink available.
Walk-in cooler, prep cooler and stand-up coolers measured at 4C or lower. Chest freezers measured at -18C or lower. Hot-holding unit measured at 78C.
Food observed to be stored at least 6 inches off the floor.

NOTE: Ensure hard to reach areas such as behind chest freezer and dough mixer in the kitchen area are cleaned and sanitize to prevent build-up of rodent droppings.

Overall, facility is well organized.
