303 - Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Dishwasher wash water cycle temperature not adequate. (measured at 42 - 45 C). New booster purchased. Arrival date unknown. Clarify with owner. Final rinse chlorine measured approx. 50 ppm.
Corrective Action(s): To ensure chemical sanitizing obtains optimum conditions, the water temperature must reach 60 C or manufacturers specifications. This muxt be corrected immediately. Operator must provide timeline for correction and must be completed no later than ten days from inspection.

304 - Premises not free of pests [s. 26(a)]
Observation: Ants continue to infest facility. Noted ant activity at cook line on both sides. Likely due to available food supply in many parts of premises on the floor.
Corrective Action(s): Contact Pest Control operator/company (PCO) to address pest issue. Provide receipts indicating work and advice from PCO in email to this office. It is important to properly clean facility and ensure cleanliness is maintained to control any pest infestation issues.
To be reviewed with ownership and at follow up inspection date.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Some cleaning has taken place since last inspection. However, not enough. Too many areas of premises remain dirty with accumulations of food debris.
Corrective Action(s): As discussed with staff the following areas MUST completely cleaned and sanitary conditions returned to this premises:
- dry food bins;
- walls in food prep areas;
- under and around dishwasher and related equipment supplies;
- the locker space;
- the walk-in cooler floor (everywhere);
- Under and around any equipment/counter or other legs and secondary storage areas;
- area to the left of front counter;
- Stainless steel trim work or counter space along cook line;
- black bin freezer;
- behind shelves at back door;
- all dollies and trolleys (top to bottom);

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Front prep cooler fixed according to staff. However, still not working properly. Temperature noted 23 C. No food observed in unit.
Corrective Action(s): Discussed with staff. Technician added gas last week, but will be returning this week to fix. Do not store food in this unit until it is repaired and able to keep food less than 4 C.
**Remove from premises if not repairable. Do not use as alternative storage.
Review at re-inspection date.

Comments

Wood and plastic shelving in back of kitchen remains untouched from previous inspection. Neither the wood shelves or black plastic shelves appropriate for food facility as explained in previous inspection. Remove with proper shelving that is made from material and designed for proper and easy cleaning.

Cleaning required at facility must be improved and completed in a more thorough manner. See violations for specifics. Additional cleaning staff may be required to complete necessary work.
