Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] (Observed food debris in the sanitizing sink. Staff informed that he cleaned the dishware, rinsed then placed the dishware in the bleach water sink; test strip verified 100ppm in the sanitizer.)
Comments

Two compartment sinks properly setup. FHA manual warewashing in Chinese provided to operator.
Rat droppings removed although two were noted under fridge which the operator informed it was hard to reach.
Please continue to monitor rodent activity through cleaning regularly.
Exhaust hood area cleaned.
Floor tiles replaced. Discussed about replacing all floor tiles eventually due to grease build up forming underneath tiles.
Screen door replaced.
Plastic tote obtained to store all cleaned tupperware underneath the sink.
