Observation (CORRECTED DURING INSPECTION): Foods in the prep cooler were probed at 8C.
Corrective Action(s): Cold potentially hazardous foods must be maintained at 4C or less to prevent the growth of pathogens and or the formation of toxins. Foods were transferred into a cooler at 4C at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Staff observed wiping food contact surfaces with a cloth towel.
Corrective Action(s): Discontinue use of cloth towels in wiping surfaces - this may result in cross contamination. Ensure all surfaces are wiped with a sanitizer. Surfaces sanitized at the time of inspection.

Observation: Rodent droppings were found in the facility and sticky traps were found throughout the facility.
Corrective Action(s): Have facility serviced by professional pest control services to eliminate the pest issues. The following can be done to deter pests: maintain facility in a clean and sanitary condition, store foods off the floor and in pest proof containers. remove garbage and organics throughout the day, and seal any potential entry points.

Observation: Rodent droppings were observed under equipment on counter tops and behind container in shelving area.
Corrective Action(s): Clean all areas affected by rodent droppings and sanitize all affected areas using a 1:10 bleach solution.

Observation: Prep cooler was at 8C. Temperature records indicated cooler was at 7C on 2 days for March 2019. Cooler unit was adjusted and temperature did not decrease
Corrective Action(s): Service cooler unit and ensure it can maintain temperatures at or below 4C on a consistent basis to prevent the growth of pathogens and or the formation of toxins.

-Both upright coolers were at 4C or less.
-Bar coolers were at 4C.
-Under counter freezer was at -12C.
-No hot holding at the time of inspection.
-Chicken wings were probed at greater than 74C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Glasswasher had a final rinse of 12.5ppm iodine (minimum 12.5ppm required for proper sanitizing).
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle tested at 200ppm.
-Ice machine clean and well maintained.
-Ice scoop stored in a sanitary manner.
-Foods stored off the floor and covered.
-Raw foods stored below ready-to-eat foods.
-FoodSafe Level 1 valid until Dec 09, 2021.
