- Mechanical Dishwasher: High Temperature = Ok.
-> Wiping cloth storage discussed. Cloths are to be kept, completely submerged, in a sanitizer solution at all times. Monitor.
-> Cleaning and disinfection of all food contact surfaces are to be conducted after use or in a timely manner. (ie: ~3 hour intervals)

- Sanitary Facilities: Ok. Single use towels are to be kept accessible at all times.
