Observation (CORRECTED DURING INSPECTION): No sanitizer was available in the front sushi bar area.
Corrective Action(s): Ensure sanitizer solution is readily available in all food preparation areas. Keep all wiping cloths stored in sanitizer solution to prevent microbial growth.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation: Noted bowl of cut up partially thawed tuna 5C on counter. Staff member said they are thawing it out.
Corrective Action(s): Ensure frozen potentially hazardous foods are thawed at 4C or less. Do not thaw potentially hazardous foods at room temperature.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Noted hood ventilation system had heavy grease build up and ceiling in the back food preparation area around the hood ventilation had dust build up. Staff said they have scheduled a hood ventilation cleaning and the ceiling will be cleaned at that time too.
Corrective Action(s): Ensure hood ventilation system and ceiling are cleaned before there is such heavy build up of grease and dust which can potentially contaminate foods being prepared in the areas below.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Noted foam material and duct tape on the corner of the drain board beside the dishwasher. Staff said this is a sharp corner and in order to prevent getting cut that the foam and tape was placed on there.
Corrective Action(s): Have corner of drain board repaired/replaced so that it is smooth and washable. Do not use absorbent material such as foam, tape, cardboard, string...etc to repair equipment in the premises.

Comments

- All handwash stations had soap, paper towel, hot and cold running water.
- All coolers 4C or less (walk in, sushi display, prep cooler...etc)
- All freezers -18C or less (walk in...etc)
- All hot holding 60C or higher (salmon skin and various tempura under heating lamp, miso soup, rice...etc)
- All stored foods appeared protected (ie. off the ground, covered..etc).
- Lights in food preparation areas had covers/sleeves.
- Tags available for shellfish. Keep tags on site for minimum 3 months.
- Consumption of raw oyster advisory available at customer tables.
- Ice machine appeared clean with the scoop for the ice stored outside of the ice in a separate container.
- No obvious signs of pest activity noted at time of inspection. Back door was closed at time of inspection.
- Chlorine sanitizer 100ppm in container with cloths submerged in the back kitchen food preparation area.
- High temperature dishwasher achieved 71C (with thermolabel).
