Observation (CORRECTED DURING INSPECTION): - Raw eggs stored at room temperature.
- Double stacking in the prep cooler, above the insert line.
Corrective Action(s): Discard the foods noted above. Do not double stack or fill above the insert line as this portion of the prep cooler does not adequately cool cold perishable foods.

Observation (CORRECTED DURING INSPECTION): - No surface sanitizer at the time of the inspection. Operator prepared new sanitizer at >200ppm chlorine bleach concentration.
- Food containers and bins stored directly inside the mop sink.
- Clean plates and bowls stored on shelf directly beside the mop sink.
Corrective Action(s): - Operator must keep surface sanitizer available at all times.
- Remove the food containers from the mop sink. This is for mopping only.
- Relocate the storage area for clean plates and bowls.

Observation (CORRECTED DURING INSPECTION): - Observed staff using the main handwashing station in the kitchen to rinse scoop.
- No paper towel in the dispenser at the middle handwashing station in the dishpit. Staff refilled the dispenser.
- Middle handwashing station was inaccessible, obstructed by large garbage bins.
Corrective Action(s): - Do not use this sink for any warewashing. This is a designated handwashing station and must be used for handwashing only.
- All handwashing stations must be equipped with paper towels.
- All handwashing stations must be made easily accessible.

- Backdoor was kept slightly opened throughout the inspection.

- Keep the backdoor closed to prevent pest entry.

Observation: Dirt and food debris in the following areas:
- inside and outside all coolers
- on floors of the dry storage room
- floors throughout the kitchen
- underneath the sinks in the main kitchen and beside the dishwasher
- on ceiling tiles

Significant build up of grease on the ventilation hood/exhaust system along the cookline. Next service due date was August 2022.
Corrective Action(s): Deep cleaning is required. Implement a monthly deep cleaning schedule. This will be verified during the next follow up inspection.

Comments

- All other handwashing stations equipped with hot/cold running water, liquid hand soap, and single-use paper towels in dispensers.
- High temperature dishwasher achieved 78C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks.
- No signs of pest activity at the time of the inspection.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.
- Washrooms appear to be in clean condition. Handwash station fully stocked.

Temperature control:
- All coolers < or = 4C
- Front beverage cooler = 4C
- All freezers < or = -18C
- Rice cooker = 60C.
