Observation: Meat was observed on a tray in the walk-in freezer. Operator mentioned that he had put it in there this morning to freeze.
Corrective Action(s): Once food has frozen, bag/cover them to protect from contamination

Observation: Some general cleaning required. Staff were in the process of pulling food out since they close at 4pm.
Corrective Action(s): Clean under the sinks in the sandwich prep area, clean the potato slicer.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: The caulking at the handsink beside the ice machine is coming apart.
Corrective Action(s): Re-caulk the area.

Comments

- Coolers < 4 degrees C
- Freezers are < -18 degrees C
- Dishwasher rinse was 77 degrees C at plate level
- 200 ppm Quats was available for sanitizing at each station.
- Hand sinks are fully equipped
-A temperature log is being maintained.

DO NOT KEEP CANDIED RINDS IN THE DRY STORAGE AREA. STORE IT IN THE COOLER AS DISCUSSED.
