Observation (CORRECTED DURING INSPECTION): 1. Dishwasher sanitizer measured 0 ppm chlorine.
2. Quat sanitizer spray bottle measured 50 ppm
Corrective Action(s): 1. After washing equipment, dishware, and utensils in the dishwasher, manually sanitize them in nearby sink by submerging in 100-200 ppm bleach solution for at least 30 seconds. Allow them to air dry before using.
2. Prepare new Quat sanitizer and ensure it is maintained at 200 ppm.

Observation (CORRECTED DURING INSPECTION): Most hand washing stations were not equipped with liquid soap and paper towels. One paper towel roll was available in the kitchen.

- Hand washing station basin
- Spilled spices at cook line
- Shelving areas in the kitchen

- Interior of 3 door cooler
Corrective Action(s): Clean all noted areas. Correct as soon as possible.
