Comments

Exhaust hood has been professionally cleaned and operator understands to clean the exhaust filters at least every 2 weeks, not every 2 months.
Cleaning of the prep coolers, racks have been completed as well.
No worn out/broken food containers observed onsite. Please remember to order more new food containers and discard any that are chipped/worn out as they cannot be properly cleaned.
Ice wand also obtained to cool down stews. Discussed with operator to submerge the pot into clean sink of cold water, then stir the food product with ice wand.
Use a clean ice wand for each new product, do not mix.
The large pot was stored in the glass cooler at time of inspection, bags of frozen soup base was stored inside the large pot.
Reminded operator that the rubber door seals on prep coolers should be replaced by next routine inspection.
Reminded operator to put away delivery food right away.
