Observation (CORRECTED DURING INSPECTION): Quats sanitizer solution in spray bottles were at 100 ppm. Too low to be effective.
Corrective Action(s): Sanitizer dispenser in the back sink was dispensing low (100 ppm). Need to be re-calibrated and flush out air bubbles. All solutions in the sanitizer spray bottles were changed. Other dispenser (beside the hand sink) measured 200 ppm.

Comments

Hand wash stations provided with constant supply of liquid soap and paper towels.
Temperature checks:
-Walk-in coolers registered 3-4 deg C.
-Display coolers and line coolers were at 2-4 deg C.
-Freezers were at -16 deg C. (frequent open/close).
-Hot holding for chicken, pies, wedges, onions rings = 60 deg C or above.
-Rotisserie hot cabinet = 65 deg C (internal temp of chicken).
-Buffet hot holding:
-soups were at 74 deg C.
-hot foods were at 60-64 deg C.
-cold foods (salads) were at 4 deg C.
Temperature monitoring logs available; however, Nov. 6 was not recorded on the log.
Observed employees hand washing and wearing clean uniforms/hair restraints.
General sanitation was good. Clean-up after preparations and garbage removal.
Pest control monitoring in place.
