205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Bean sprouts observed stored in room temperature water in a large container next to cooking equipment. Operator mentioned that the sprouts were removed from the cooler less than 1 hour ago. Water in bean sprouts measured at 18'C. Ice was added to the containder during time of inspection.
Corrective Action(s): Ensure all potentially hazardous foods are stored at 4'C or lower at all times either in cold-storage units which are able to maintain 4'C or lower or in an ice bath. Replenish the ice in the sprouts once the ice melts to ensure potential bacteria do not grow and/or multiply at room temperature.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Ice machine observed with pink mildew on filter. Staff turned off the ice machine during time of inspection, discarded the remainder ice, cleaned and sanitized the machine with 200 ppm QUATS solution.
Corrective Action(s): Clean and sanitize the ice machine (as per manufacturer label) more frequently (as per approved sanitation plan) to prevent mold/mildew build up which can potentially contaminate ice. Do not use until the ice machine is cleaned and sanitized as per manufacturer label and verified by the health inspector.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): QUATS sanitizer bottles measured at less than 200 ppm QUATS concentation with test strips (one bottle measured at 0 ppm and one bottle measured at 100 ppm). Operator replaced the solution from 2-compartment sink QUATS dispenser. Both bottles measured at 200 ppm QUATS concentration.
Corrective Action(s): Replace sanitizer solution more frequently (as per approved sanitation plan) to ensure sanitizer is at the required strength of 200 ppm QUATS to effectively sanitize food contact surfaces and kill potential pathogens.

Observation (CORRECTED DURING INSPECTION): Hand washing station upon entry into kitchen observed obstructed with large containers inside the basin and large containers placed in front of the hand sink. Staff removed obstructions during time of inspection.
Corrective Action(s): Ensure all hand washing stations remain unobstructed and are used only for the purpose of hand washing prior to handling food to prevent cross-contamination.

Observation (CORRECTED DURING INSPECTION): 1. Sliced green onions observed stored directly next to hand washing station. Operator moved the green onions to a cooler during time of inspection.

2. Marinated raw chicken observed being prepared and portioned over the dishwasher tray which was placed on the garbage can. Operator moved the raw chicken to the prep counter during time of inspection.

3. Multiple food items in sandwich cooler (bottom) observed uncovered, one of which was a large container of raw chicken. Staff covered the foods in the sandwich cooler during inspection.
Corrective Action(s): Ensure all foods are protected from contamination at all times by ensuring they are always covered with food grade material, stored at least 6 inches off the floor and away from potential sources of contamination (such as sinks and chemicals).

304 - Premises not free of pests [s. 26(a)]
Observation: Few fruit flies observed in kitchen arae (near bubble tea station) and in public washroom. Operator has not contracted pest control company.
Corrective Action(s): Place fruit fly traps (yellow sticky ribbon) at the kitchen area and in the washroom to remove current fruit fly population. Vinegar water may be poured down the drains to remove any active fruit fly larvae. If the problem persists, contact pest control to complete an assessment.

Routine Inspection Conducted

1. Temperatures:
- 2-door cooler at 3'C
- 2-door freezer at -19'C
- Sandwich cooler at 3'C (top) and 4'C (bottom)
- Under-counter prep cooler for bubble tea station at 4'C
- Under-counter prep freezer at -19'C
- Hot-holding units exceeded 60'C

2. Sanitation:
- General sanitation of premises satisfactory (except for above noted violations)
- Hand washing stations supplied with liquid soap, paper towel, hot and cold running water
- High-temperature dishwasher reached 76.9'C at plate surface (exceeds minimum required final rinse temperature of 71'C)
- 2-compartment sink available with drain plugs
- QUATS dispenser at the 2-compartment sink measured at 200 ppm QUATS concentration
- Ventilation hood kept in good sanitary condition

3. Storage:
- All food is stored at least 6 inches off the floor
- Invoices available for seafood/meats
- In-use rice utensil and water in utensil container changed every hour (as per operator)
- Chemicals stored away from food

4. Administration:
- Operating permit visible during inspection
- FOOD SAFE Level 1 trained staff available on premises
