Followup inspection to Rpt # VCHN - AXNPYX:

High temperature dishwasher serviced. 78.5 degrees C. at the plate surface during the final rinse cycle.
100ppm bleach sanitizer solution available for use.
Eggs stored on lower shelf in the walk in cooler.
Light cover in place for light fixture for the walk in cooler.
Freezers defrosted but already starting to ice up. Defrost on a regular basis.

As discussed on the April 9th inspection ensure only small quantities of salad ingredients (cut tomatoes, lettuce, and cut cucumbers) are stored at room temperature. Any leftover after 2 hours must be discarded.
