Sanitation has greatly improved in the following areas (debris has been scraped off and surfaces have been thoroughly cleaned): -Underneath cooking line -Sides of cooking equipment -in the vent hood grates -- very clean now -Underneath the carts by the dishwashing area Foods in plastic buckets and on metal trays in walk in cooler are now covered Proper dishwashing (3 compartment sink dishwashing method) was observed, 3rd compartment (left most compartment) was filled with solution of bleach and water measuring at 100 ppm chlorine residual Thank you for the corrections.
