Routine Inspection

Hand sinks have hot/cold running water, liquid soap and single-use towels.
High temperature dishwasher reached 71 degrees C. on plate surface during sanitizing cycle.
Sanitizer spray bottle labelled and registered 200 ppm quats.
Sanitizer dispenser registered at 200 ppm quats.
All coolers with potentially hazardous foods at 4 C or below.
Freezer at -18 C or below.
Hot holding units at 60 C or above.
Ice machine is clean.

*Discussed proper cooling methods. Ensure hot foods are cooled from 60 C to 20 C within 2 hours and 20 C to 4 C within 4 hours.
*Organize storage closet and surrounding area.
*Keep the floor around utility sink dry.

Reminder, grease trap is to be serviced every 90 days OR when it is 25% full, whichever one comes first as per the Metro Vancouver bylaw.
